1 1/2 lbs. of boneless pork chops or boneless chicken breast
2 T. olive oil
2 T. flour
3 C. water
2 cans of chicken broth
2 10 oz. cans or original Rotel tomatoes
1 16 oz. can petite diced tomatoes
1/2 C. chopped onions
1 large can of mild chilies
4-6 garlic cloves, minced
1 T. cumin
2 T. sugar
1 t. chili powder
1 package of roasted home made chili's OR another large can of green chili's OR a large can of jalapeņos depending on how hot you like your chili. (I like to use the fresh roasted pepper from my local farmers market.)

Cut the chicken or pork into bite size pieces, coat them in flour and brown in olive oil. After the meat is browned, add the 2 T. of flour, then stir while you slowly add the chicken broth to avoid lumping. Once this is done, you will add the remaining ingredients. Simmer for 4 hours. You can add cornstarch or 2-3 T. of flour to change the consistency. If the chili is too thick, you can add water to thin it.

This recipe is an old recipe from a Spanish lady that I had worked with, and we used it for our work chili contest. We won first place in our company chili contest three years in a row using this recipe. This is really tasty and easy to make.
