Potato - 700 gm
Cooking oil - 6 tbsp
Mustard seed - 1/2 tsp
Dried red chilly - 3 nos
Fenugreek seed - 1/8 tsp
Onion finely sliced - 225 gms
Green chilly sliced lengthwise - 2
Turmeric - 1 tsp
Chopped coriander leaves - 25 gm
Salt to taste

Boil the potatoes in their jackets.
Peel the potatoes and dice them evenly.
Heat the oil over medium heat in a wide shallow pan and fry the mustard seed until they pop.
Add red chilly and the fenugreek seed, immediately follow with the onions and green chilly.
Fry the onion until they are golden brown.
Add turmeric, potatoes and salt. Stir and fry gently until the potatoes are heated through.
Remove from heat and garnish with coriander leaves.
