3 lbs potatoes, scrubbed
2 sticks butter
1 1/4 c hot milk
fresh ground black pepper
1 head cabbage, coarsely chopped
1 1/2 lbs ham or cooked and drained bacon, chopped into small pieces
4 scallions, finely chopped
Chopped fresh parsley for garnish

Directions:
Steam potatoes in their skins for 30 minutes. When cool enough to handle, peel, then chop before mashing. Mash thoroughly to remove all lumps. Add one stick of butter in pieces.

Boil cabbage in 1" unsalted water until it turns a darker color. Add 2 tablespoons of butter to tenderize. Cover for 2 minutes. Drain thoroughly.

Add cabbage, scallions and ham/bacon to the mashed potatoes, stirring gently. Garnish with parsley.
