1 c quick oatmeal
1 1/4 cup boiling water
1/2 c shortening
1 c granulated sugar
1 c brown sugar
2 eggs
1 tsp cinnamon
1/2 tsp salt
1 tsp vanilla
1 1/3 c flour
1 tsp baking soda

Topping
6 tbsp melted butter
2/3 c brown sugar
1/4 c half & half or canned milk
1 c coconut
1 c chopped walnuts or pecans
1 tsp vanilla

Directions:
Directions:
Mix oats with boiling water, and set aside to cool.

Cream shortening, then beat in sugars, eggs, cinnamon, salt and vanilla. Stir in oatmeal mixture, sifted flour, and baking soda.

Pour into greased 9X13 pan. Bake at 350 º for 30-35 minutes.

Mix all topping ingredients together, then spread over hot cake. Place under the broiler for a couple minutes. Cool completely.

Not sure how many of the older Joe Sekera siblings remember the Palaio family- Friends of Mom and Dad.
Athena made this cake once when we were visiting, then sent Mom the recipe. Really good!
