1 7-10lb. Rib Roast
2 t. Salt
2 t. Pepper
1 t. Onion powder
2 T. Celery salt
1 t. Garlic powder
1 t. Paprika
1/4 C. Safflower oil

Directions:
Directions:
Combine all dry ingredients to make the dry rub for the rib roast. Cut 1 inch deep cuts into the fat of the rib roast. Coat the entire roast with the oil, then use all the dry rub on the entire roast. You can loosely cover and set in your refrigerator for a few hours before you are ready to prepare the roast. Set your roast out 1-2 hours before you place in the oven. Your roast will cook more evenly when at room temperature. Preheat the oven to 400º, put in the roast and do not cover. Bake for 60 minutes. Turn off the oven and do not open the door for 4 hours. Turn oven on to 350º and bake for 1-2 hours or more depending on how you like your prime rib cooked.
