Ingredients:  
4 oz onion, sliced thin. 2TBL Ginger, Minced. 1TBL peanut oil. 4 oz cider vinegar. 3 oz honey. 8 oz orange juice. 16 oz water. 2 oz lemon juice. 1/2 tsp ground coriander. 1/4 tsp ground cardamom. 1/2 tsp curry powder. 1/4 tsp red pepper flakes. 8 oz dried apricots. 8 oz dried cherries.

Saute onion and ginger in peanut oil until soft, not browned. Add remaining ingredients and simmer for 20 minutes. (add more water if chutney is too thick) To cool, transfer to a storage container, cover and refrigerate. Holds up to 2 weeks.
