10.5 Tbsp all purpose flour
1 cup sugar
1/4 tsp salt
1 Tbsp Knox unflavored gelatin
2 cups milk
3 egg yolks, lightly beaten
2 tsp vanilla extract
1 1/2 cups whipping cream, whipped
4-5 bananas
1 baked 9 inch pie shell

Directions:
Directions:
Combine flour, sugar, salt and gelatin in top of a double boiler.

Add milk and mix with a hand mixer to blend well.

Place mixture over simmering water and whisk until mixture starts to thicken. Cook an additional 5-6 minutes.

Mix a small amount of hot mixture into egg yolks to temper, then mix egg yolk mixture back into hot mixture. Cook an additional 2 minutes.

Cool mixture thoroughly in refrigerator; then

Add vanilla and 1/4 of the whipped cream and blend thoroughly with a hand mixer.

Spoon half of mixture into baked crust. Cover completely with sliced bananas.

Spoon remaining pudding mixture over bananas and top with another layer of sliced bananas.

Top entire pie with remaining whipped cream, spreading to crust edges.

Refrigerate at least 6 hours.
