4 cups rhubarb cut into 1 inch pieces
3 tablespoon cornstarch
1/4 teaspoon salt
1 cup sugar
1 9 inch unbaked pie shell or make pie crust
9 oz package of cream cheese
2 eggs
1/2 cup sugar
1 cup sour cream
Almonds for garnish

Directions:
Directions:
Over medium heat cook rhubarb, cornstarch salt, and 1 cup sugar stirring often until mixture boils and thickens. Preheat oven to 425 degrees.
Pour rhubarb mixture into pie crust and bake 10 minutes. Remove from oven. In a small bowel with a mixture at medium speed beat cream cheese, eggs, salt, and 1/2 cup sugar until smooth. Pour over rhubarb mixture. Turn oven down to 350 degree sand bake another 30 to 35 minutes until set. Cool on wire rack. Chill. To severe spread sour cream and garnish with toasted almonds.
