6 whole bone-in chicken legs, skinned and cut into drumsticks and thighs
3 tbsp olive oil
1 onion, sliced thin
1 tsp dried thyme
1/4 tsp saffron threads
2 strips of orange peel, each about 4" long( orange part only- pare with a vegetable peeler)
3/4 c white wine
1 14oz can diced tomatoes in juice
1 14 oz can chicken broth
12 1/2" baguette slices, brushed with additional olive oil


Directions:
Directions:
Heat olive oil in very large, wide ovenproof pan over medium heat. Saute onion until soft and golden, about 8 minutes. Add thyme,saffron, orange peel and wine. Bring to a boil. Then add tomatoes and chicken broth and return to a boil. Season chicken pieces with salt and pepper. Add chicken to pan in a single layer, submerging in sauce and bring to a boil once more. Cover pan and place in 375º oven for about 45 minutes until chicken is cooked through. Remove chicken from oven while toasting bread on a baking sheet for about 12 minutes.

Serve chicken and sauce in shallow bowls topped with bread to soak up the broth.
