3 medium Delicious apples, cored and chopped
1 (20 oz.) can pineapple chunks
1-1/2 c. salted peanuts
2 c. miniature marshmallows
1/2 c. sugar
1 T. cornstarch
1 T. lemon juice
1 egg, beaten
1 - 8 oz. carton whipped topping

Directions:
Directions:
In heavy bottomed saucepan, mix sugar, cornstarch, lemon juice, egg, and juice from pineapple. Cook over low heat, stirring constantly, until mixture thickens, about 5 minutes. Cool. Stir in whipped topping.

In large bowl, mix apples, pineapple chunks, marshmallows, and peanuts. Fold dressing into fruit mixture and refrigerate 2 to 3 hours before serving.
