5 Apples
5 T. sugar
2 tsp. cinnamon
3 c. flour
2-1/2 c. sugar
1/2 tsp. salt
1-1/2 tsp. baking soda
1-1/2 tsp. baking powder
4 eggs
1 c. oil
1/3 c. orange juice
2 tsp. vanilla

Directions:

Peel the apples and thinly slice. Place in a bowl and toss with the cinnamon and sugar. Set aside.

In a large bowl, mix together the flour, sugar, salt, baking powder, baking soda, Add the eggs, oil, orange juice, and vanilla and blend well for 3 minutes, scraping the sides of the bowl often. This is a THICK batter. Alternate layers of batter and apples in a greased tube or Bundt pan (3 layers batter and 2 layers apple). Bake 1-1/2 to 1/3/4 hours in a 350 degree oven. Cool on rack 10 minutes, then invert pan. Remove cake carefully. Makes a large cake! A simple glaze can be drizzled over the top if you wish. When I made it last, I served it with scoops of frozen vanilla yogurt.
