1 box jumbo pasta shells
1 can (24 oz.) spaghetti sauce
2 c. ricotta cheese
2 c. mozzarella cheese, grated
2 eggs, beaten
1/3 c. bread crumbs
1 green onion, finely chopped or substitute onion powder
1 tsp. salt
1/4 tsp. pepper
1/4 c. grated Parmesan cheese

Prepare shells according to package directions, drain well and set aside. Lightly grease 13 x 9 2 - inch baking dish. Spread thin layer of spaghetti sauce over bottom of dish. In a large bowl combine ricotta, three quarters of the mozzarella, eggs, bread crumbs, onion, salt and pepper. Stuff rounded tablespoons of mixture into 30 shells. Arrange shells in a single layer, seam side down in baking dish. Spoon remaining sauce over shells. Sprinkle with grated Parmesan cheese and remaining mozzarella cheese.
Bake 350º for 30 minutes.
Makes 6-8 servings.
