3 eggs
1 c sugar
2/3 c pumpkin
1 tsp lemon juice
3/4 c flour
1 tsp baking powder
1/2 tsp nutmeg
2 tsp cinnamon
1 tsp ginger
1/2 tsp salt
1 c powdered sugar
1 8oz cream cheese
4 T butter
1/2 tsp vanilla

Directions:

Beat eggs on high for 5 minutes. Stir in sugar, pumpkin and lemon juice. In separate bowl mix flour, baking powder, nutmeg, cinnamon, ginger and salt. Fold the dry ingredients into the pumpkin mixture. Spread out in a greased jelly roll pan (15X10X1). Bake at 375º for 15 minutes. Take out pan. Put a dish towel on counter and sprinkle with powdered sugar. Pour the pan on the dish towel. While hot roll the towel up with the cake. Put in refrigerator to cool.
Blend together the filling, powdered sugar,cream cheese, butter and vanilla. When cool unroll towel and spread the filling on the cake roll. Roll up and wrap in foil. Put in freezer or refrigerator. These freeze real well, great to make ahead of time.
