1 pkg spice cake mix
3 large carrots shredded (2 cups)
1 8oz can crushed pineapple - drained
1 c chopped pecans - divided
2 8 oz packages cream cheese - softened
2 c powdered sugar
1 8 oz tub Cool Whip - thawed

Directions:
Directions:
Prepare cake by package directions - stir in carrots, pineapple and 3/4 c nuts. Pour into 2 - 9 in pans sprayed with cooking spray or Crisco and flour.

Bake 25-30 minutes @ 350 until toothpick inserted in center comes out clean. Remove from pan and cool on rack until cooled completely

Beat cream cheese , powdered sugar until well blended. Fold in Cool Whip

Place 1 cake layer on plate, cover with frosting and put second layer on top. Frost top and sides of cake - sprinkle with remaining nuts.

Keep refrigerated
