2/3 cup freshly grated parmesan cheese
1/4 cup all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. paprika
1 egg, beaten
1/4 cup milk
5-6 small catfish filets (about 2 pounds)
1/4 cup butter or margarine, melted
1/3 cup sliced almonds, optional

Directions:
Directions:
Combine cheese, flour salt, pepper and paprika; stir well. Combine egg and milk, stir well. Dip filets in egg mixture then dredge in flour mixture. Arrange in a lightly greased 9x13-inch baking dish. Drizzle with butter. Sprinkle with almonds over top if desired. Bake at 350º for 35 to 40 minutes or until fish flakes easily when tested with a fork.
