1 large onion, sliced
1/4 Cup all-purpose flour
1 boneless beef roast
salt and pepper to taste
1 (1.2 ounce) package dry beef gravy mix
1 (1 ounce) package dry ranch dressing or dip mix
1 (0.7 ounce) package dry Italian-style salad dressing mix
1 Bay leaf
1 Cup water, or as needed
carrots and potatoes cut and peeled

Directions:

1. Spray the inside of the slow cooker with cooking spray. Spread the onion slices out into the bottom of the cooker.

2. Spread the flour out onto a work surface. Sprinkle the roast with salt and pepper, and roll the roast in the flour to coat all sides. Pound the flour into the meat. Place the floured roast into the cooker on top of the onions. Whisk together the beef gravy mix, ranch dressing mix and Italian dressing mix in a bowl, add the water and whisk until smooth. Pour over the roast. Allow the roast to cook for about 2 hours and add carrots and potatoes, distribute around the meat.

3. Cover the cooker, set to Low, and cook until roast is tender and gravy has thickened, about 8 hours (longer if larger roast).

I actually cooked a 5 lb. roast on High and it came out fine. You can add more water if you want more gravy.
