1lb. ground beef
2 tbsps. salad or olive oil
1 medium onion
1 clove garlic
1 tsp. parsley, chopped
2-6oz. cans tomato paste
1/2 tsp. salt
1/2 tsp. pepper
8oz. lasagna noodles
2 eggs
3/4 lb. ricotta or creamed cottage cheese
3/4 lb. mozzarella cheese, slice or shredded
Grated parmesan cheese

In a large heavy pan, brown ground beef in oil with onion, garlic and parsley. Add tomato paste, water, salt and pepper; simmer for one hour. Meanwhile, cook and cool noodles as directed on package. Mix together eggs and ricotta or cottage cheese. In 9x13-inch baking pan, spread about 1/2 cup sauce and then alternate layers of lasagna, sauce, ricotta and egg mixture, and mozzarella until baking dish is filled. Top with sauce and aprinkle with parmesan cheese. Bake at 375º for about 20 minutes.
