2 T Flour
1 tsp Salt
1/2 tsp Pepper
1 lb. Steak cut into serving pieces
3 T Vegetable oil
1 Carrot Diced (or small can of sliced carrots)
1 Stalk Celery chopped
1/4 c. Onion chopped
1 1lb Can Stewed tomatoes
1 c. Grated Cheddar Cheese

Directions:

Pre-Heat Oven to 375º
Combine Flour, Salt, and Pepper on a plate
Dredge meat in flour mixture until covered
Brown meat in HOT oil
Arrange meat in bottom of casserole dish
Add remaining Flour mixture to Remaining oil
Stir in Tomatoes, carrot, celery, and onion
Bring rapidly to a boil then pour over meat in casserole dish
Cover with foil and bake at 375 for 1 1/2 hours or until vegetables and meat are tender
Uncover and top mixture with Cheese
Place back in oven and cook for 5-10 minutes or until cheese is completly melted.
Remove and serve
