3/4 c. sifted cake flour
1/4 c. cocoa
1/4 tsp. salt
1 1/4 c. egg whites (room temp.)
1 tsp. cream of tartar
1 1/4 c. sifted sugar
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 375 degrees. Sift together flour and cocoa over wax paper 4 times. In large metal bowl beat egg whites and salt until frothy, add cream of tartar and beat until stiff peaks form. Fold sugar into egg whites 1/4 c. at a time, add vanilla. Gently fold flour mixture into whites 2 T. at a time. Gently spread in an ungreased angel food pan. Cut through cake from center to outside edge about 8 times to remove large air pockets.
Bake at 375º for 35 minutes.
