SALAD:
8 - 10 cups Salad greens - I use romaine and baby spinach (stemmed)
1 c. grated swiss cheese
1 crisp red apple (cut in small chunks)
1 crisp green pear (cut in small chunks)
1/2 cup craisins
1 can mandarin oranges, drained
sugared pecans and almonds ( I use about a cup)

DRESSING:
1/2 c. sugar
1/3 c. red wine vinegar
2 T. lemon juice
3 T. finely chopped red onion
1 t. salt
2/3 c. veg. oil (I used canola)
3 t. poppy seeds

CANDIED ALMONDS & PECANS'
1/4 c. unsalted butter
2 c. slivered almonds
1 c. pecan halves
1/2 c. sugar

SALAD: Mix all salad ingredients. Just before serving, add dressing and candied almonds and pecans. Toss.

DRESSING: In blender, mix first 5 ingredients. Add oil and blend. Stir in poppy seeds. Dressing can store in frig. for several days.

CANDIED ALMONDS AND PECANS: Melt butter in non-stick skillet. Add nuts, stir to coat them in butter. Sprinkle with sugar and cook on medium-low heat stirring constantly until almonds are golden brown. Remove from heat and from the pan as they will continue browning too much. Cool and store in airtight container in the refrigerator. This make more than one salad recipe but is nice to have extras for other salads. They are also very good on ice cream.

This is one of the very best salads I have ever had and goes well with almost any kind of food. Would also be delicious topped with a grilled chicken breast.

I usually just eyeball the amounts I want to use of each ingredient depending on how many people I am serving. Then I pour the amount of dressing I want on the salad until the greens are coated.

You can also use peanuts or cashews in place of the sugared pecans which gives it a different but very good flavor.
