1/2 cup butter
2 T. Sesame seeds
2 packages chicken flavored Raman noodles, broken into pieces
1/2 cup sliced almonds
2 T. sugar
Dressing:
1/4 cup rice wine vinegar
2 T. Soy sauce
1/2 cup sugar
1 seasoning packet from
Raman noodles
1/2 cup oil
Salad:
2 pounds bok choy or Napa cabbage,
stalk & leaves chopped
5 green onions, sliced
6 oz.. sliced water chestnuts, drained
6 oz. can pineapple tidbits, drained
2 cups cooked, chopped chicken

In a large skillet, melt butter over medium heat. Brown sesame seeds, noodles, almonds and sugar, about 5 minutes. Remove from heat and cool to room temperature. In a small bowl, combine sugar, soy sauce and seasoning. Stir in vinegar, then slowly whisk in oil. In a large covered bowl, place cabbage, onions, water chestnuts, pineapple, and chicken. Toss with dressing and chill. To serve, toss chilled salad with crispy mixture on top or on the side.
