Cranberry Ice Cream Recipe

1 c fresh cranberries
3 Tbsp sugar
1/3 c dried cranberries
2 eggs
1/3 c white sugar
1/3 c brown sugar
2 c heavy cream
2 c milk
pinch salt
1 Tbsp pure vanilla

Directions:
Directions:
Place cranberries & 3 Tb. Sugar in food processor & pulse until finely chopped, pausing to scrape sides. Stir in dried cranberries. Pulse briefly. Refrigerate.

With mixer cream together the egg and sugar.
Whip in cream, whipping until slightly fluffy, not quite whipped cream.
Add milk, salt and vanilla.

Pour cream mixture into canister ice cream freezer, freeze according to directions.

When ice cream is done, remove dasher and gently stir in cranberry mixture.
Makes 1 quart.
