Porcupine Meatballs Recipe

1 lb. ground beef
1/2 c. diced onion
1 clove garlic, minced
1/2 c. Minute Rice
1 tsp. salt
1/4 tsp. pepper
1 can tomato soup
1 cup water

Directions:
Directions:
Combine ground beef, onion, garlic, rice, salt and pepper. Form into 8 large meatballs.

In pressure cooker put soup and water. Stir with a non-metal spoon. Put in the meatballs.

Start cooker on high for 2 minutes. Restart on Lo Pressure for 7 minutes. Quick release steam. Take off lid and check doneness of rice. If done, cut meatballs in half and let warm in soup sauce until ready to serve. If not done pressure a couple more minutes.

In oven, bake 350* 30 to 40 minutes
