4 boneless, skinless chicken breasts
10 soft flour tortillas
1 pkg. cream cheese
1 pkg. enchilada sauce mix
1/2 can tomato paste
1 can tomato sauce
2 cans water
1 cup cheddar/mozzarella cheese
1/2 cup salsa

Directions:
Directions:
1) Boil chicken in chicken broth for 1 hour and shred.

2) In small sauce pan combine tomato paste, tomato sauce, and water; bring to a boil. Add the packet of enchilada sauce mix. Cook for 5 min or until sauce is thickened.

2) Mix shredded chicken with 1/2 cup salsa, cream cheese, and cheddar cheese.

3) Pour sauce in bottom of cake 9 x 13 inch pan. Roll 2 Tbsp. chicken mix into tortillas. Place rolled tortillas in the pan. Pour the rest of enchilada sauce over the top.

4) Sprinkle with cheese. Cover and bake in 350º oven for 30-40 minutes.
