5 eggs
6 slices bacon, crumbled
1 cup mayonnaise
2 stalks celery, sliced thin
1 lb small red potatoes or 10 small potatoes, peeled and chopped
2 Tbsp. Dijon mustard
2 Tbsp. fresh parsley
1 Tbsp. pickle juice
green onions

Directions:
Directions:
1) Boil potatoes for 20 min. or until tender, drain, let cool.

2) Boil eggs 20 min, put in cold water to cool.

3) Peel and place eggs into large bowl, mash with fork. Stir in mustard, celery, pickle juice, green onions, mayonnaise, salt and pepper to taste. Set aside.

4) Cook and crumble bacon and mix in 3/4 of bacon in egg mixture. Add potatoes and coat evenly.

5) Put remaining bacon pieces on top and sprinkle with parsley.

A bacon cooking tip:
Place bacon in a cold oven on a cookie sheet lines with foil, turn oven to 350 degrees. Cook for 15-20 minutes or until crisp enough for crumbling
