1 Box Moist Lemon Cake Mix
1 Stick Butter
8 oz. Cream Cheese
1 Egg
1 tsp. Vanilla
*Granulated sugar for dipping.
Directions:
Directions:
Combine butter and cream cheese. Add egg and vanilla; stir in cake mix. Refrigerate until stiff (Around an hour). Shape into a walnut size ball. Roll in sugar.

Bake at 350º for 10 Minutes

If desired (prior to rolling in sugar) mix in 3/4 Cup coconut and 1/2 Cup diced dried pineapple, along with 1/4 Cup pecans for a Pinacolada Lemon Cookie.
* This recipe works well using a chocolate cake mix with chocolate chips, toffee and pecans. Then rolling in powdered sugar instead of granulated.
