4 - 5 Idaho potatoes, peeled and cut into wedges
1 8-ounce cream cheese
1 egg
1 cup half and half
Salt and pepper to taste
Tabasco to taste
¼ cup chopped scallions
Paprika

Directions:
Directions:
Boil potatoes until tender. Drain. While still hot, whip potatoes with cream cheese, egg,and half and half. Season to taste with salt, pepper, and Tabasco sauce. Fold in scallions. Pour into buttered casserole (I spray with Pam) or souffle dish, leaving 2 – 3 inches at top for “puffing.” Sprinkle with Paprika. Bake in a preheated 350° oven for 45 minutes or until lightly browned on top.
