6 lbs chicken cut up
2 c. regular rice, uncooked
2 16 oz cans tomatoes, chopped, drained
2 c. boiling water
2 Tbsp minced onion
salt and pepper to taste
4 Tbsp butter
4 tsp parsley flakes
1 tsp sugar
1/4 tsp garlic, minced
2 Tbsp dried green pepper flakes
1 stalk celery, chopped
1/2 tsp saffron

Directions:
Directions:
In Dutch Oven over medium heat, cook rice in butter until golden brown. Stir constantly. Stir in tomatoes, water, onions,garlic, sugar, pepper flakes, parsley and 1/2 tsp salt. Bring to boil, then remove 1/2 of mixture.

Arrange chicken pieces in Oven over remaining mixture. Sprinkle lightly with salt and pepper. Pour remaining mixture over chicken and cover with aluminum foil. Put cover on Oven and bake for 1 hour or until chicken is tender.
