1/4 c. butter
1/2 c. chopped onion
1/2 c. flour
4 c. chicken broth
3 c. 2% milk
2 1/2 lb. baking potatoes, baked or microwave
Salt and pepper to taste
Toppings:
cooked crumbled bacon
shredded cheddar cheese
sliced green onion

Directions:
Directions:
Melt butter in 6 qt. soup pot over medium heat. Add onion, cook, stirring occasionally, for 1 to 2 minutes until tender. Stir in flour. Gradually whisk in broth and milk. Peel potatoes, mash to desired size and stir into milk mixture, bring just to boiling over medium heat. Spoon into bowls and sprinkle with toppings.
