2 pounds of pork loin
1 large onion, diced
4 garlic cloves, mashed and sliced
1 large bellpepper, diced
1 lemon
1 sour orange
1 tbsp. of white vinegar
2 tsp. achiote powder
salt & pepper to taste
8 oz. water
3 pounds of yucca
1/4 head of cabbage, shredded
1/2 onion - sliced
3 medium tomatoes, sliced into strips

Directions:
Directions:
Take the pork loin and cut is bite side pieces and place in a container to marinade, add the juice of the sour orange, garlic and achiote powder for color. Let it marinade for 2 hours. After that place the pork and the marinade in a large pot and add the diced onions and bell peppers, the lemon, vinegar as well as salt and pepper with 8 oz of water. Cover and let it cook until tender (about an hour at low-med heat).

Yucca
While that is cooking take the yucca and peel it, cut into in 4th removing the inner stems. Place in a large pot and cover with water and add salt to taste. Once its tender, remove from heat and discard the water.

Cabbage
Cabbage should shredded
Remove the seeds from the tomatoes and cut into strips
slice the onion
Combine all ingredients and add salt and pepper.

Once the pork and the yucca are cooked place yucca on the serving plate then pile on the port and top with the cabbage mixture.
