6 medium red potatoes (peeled and quartered)
1/4 cup water
1/4 cup butter
1 Tbsp. dried OR fresh parsley flakes (if using fresh parsley, chop finely)
1/2 tsp. salt
1/2 tsp. pepper



Directions:
Directions:
In a 2 qt. casserole sprayed with Pam, add the quartered potatoes and the water. Microwave on high until tender (takes 12-15 minutes--test with a fork for tenderness), stopping microwave after 8 minutes to stir them. Remove from microwave and drain. In a microwave safe cup, melt the butter, then stir the salt, pepper and parsley into the melted butter. Pour the butter mixture over the potatoes and stir to coat potatoes.
