3 c white vinegar
3 c beet juice
3 c sugar
1 tsp. pickling spice

Directions:
Simmer beets in water (not too much water) till tender.

Then measure your beet juice water and add rest of ingredients and bring to a boil, pour over beets while nice and hot.
