3 eggs
1 c oil (I use light olive or coconut)
2 c sugar
2 c grated zucchini
3 Tbsp vanilla
3 c flour (I use 1 c white, 2 c whole grain flour mixture wheat, oat, spelt, etc.)
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
* 3/4 c walnuts (optional)

Directions:
Directions:
Preheat oven to 325 degrees. Grease and flour four small loaf pans. Mix oil, eggs, and sugar on low speed for 2 minutes. Add remaining ingredients and mix until well blended. Pour into prepared pans. Bake for apx. 45 - 50 minutes until center is cooked.
