1/3 cup butter
1/2 cup brown sugar
1 can pineapple, drained
Maraschino cherries
2 eggs
2/3 cup sugar
6 Tbsp pineapple juice
1 tsp vanilla
1 cup flour
1/3 tsp baking powder
1/4 tsp salt

Directions:
Directions:
Prepare baking pan by melting 1/3 cup butter in a 9" pie plate. Sprinkle brown sugar over butter (it is not necessary to use 1/2 cup). Arrange pineapple in pie plate. Place a maraschino cherry inside each pineapple hole.

Make the batter by beating 2 eggs until thick and lemon-colored (about 5 minutes). Gradually beat in 2/3 cup sugar. Then beat in 6 Tbsp of the drained pineapple juice and vanilla. In small bowl, mix the flour, baking powder, and salt and then beat all at once into batter.

Pour batter on top of pineapple. Bake 45 minutes at 350º or until toothpick thrust into center of cake comes out clean. Immediately turn upside down on a serving platter. Do not remove pan for a few minutes. This will allow the brown sugar mixture to run down over cake.

Serve while warm plain or with cool whip or ice cream.
