2/3 cup butter flavor shortening
1 cup sugar
1 egg
1 tsp vanilla
2 cups flour
2 1/4 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup finely diced tart apples
3/4 cup chopped walnuts

Directions:
Directions:
In large mixing bowl, cream shortening and sugar until light and fluffy. Beat in egg and vanilla.Combine flour, baking soda, baking powder, salt and cinnamon. Stir half into the cream mixture. Stir in the apples and walnuts and remaining dry ingredients.

Drop by heaping tsps 3 inches apart onto lightly greased baking sheets. Bake at 375 degrees for 13-15 minutes or until golden brown. Remove to wire racks to cool.
