Directions:Heat milk to scald (boil) turn off heat and add butter, sugar and salt. let cool. Add yeast to cup of luke warm water. 110º-115º Grandma used a coffee cup. Let yeast get frothy. When milk has cooled to under 115º stir up three eggs and add to milk. Put 3 cups of flour in your Kitchenaid mixer with the dough hook attached. Turn on low and add milk mixture and yeast mixture. Once well mixed up, turn mixer to 2. Add more flour a quarter cup at a time until dough forms and cleans the side of the bowls. Once it is the right consistency, remove from mixer and place in a greased bowl. Roll the dough around to cover with grease to keep skin from forming. Cover with a towel and place in a warm place. When dough has doubled in size (about an hour) beat it back down and let it raise again. Turn out on a floured work space and knead and fold it for several minutes. If making bread. roll out part of the dough with a rolling pin and fold inward to create bread dough. Place in greased bread pan and let proof for 20 - 30 minutes. Makes about three loaves. If making rolls, pinch off a plum sized piece of dough and work it in your hand pushing the sides into the center with your thumbs pinching together the end to make a ball and then place on a large cookie sheet with the pinched together end down. Let proof for 20 - 30 minutes.
Bake at 350º for 20-30 minutes |

Notes: I tried my best to write down how she did her bread while she was making it. I have made it many times and usually have great luck. I bake until starting to get a golden crust then pull them out and rub some butter on the top of each one and put them back in until golden brown.
