1 8 3/4 oz can crushed pineapple
2/3 cup rice
2 tsp. lemon juice
1 1/2 cups miniature marshmallows
1 ripe banana, sliced
1 cup whipping cream, whipped
2 Tbsp. maraschino cherries, chopped

Directions:
Directions:
Drain pineapple, reserving juice. In saucespan, combine rice, 2/3 cup water, pineapple juice,and 1/2 tsp salt. Stir to moisten rice. Bring quickly to a boil. Cover and simmer 5 minutes.

Remove from heat and let stand 5 minutes. Add pineapple and lemon juice. Cool. Stir in marshmallows and banana. Fold in whipped cream and cherries.
