1 qt milk
1/4 cup quick cooking tapioca
1/2 cup sugar
1/4 tsp salt
3 egg yolks, slightly beaten
1 1/2 tsp vanilla
3 egg whites, stiffly beaten

Directions:
Directions:
Combine milk, tapioca, sugar, and salt. Let stand 5 minutes. Add egg yolks. Bring to a boil, stirring constantly. Remove from heat (mixture will be thin) and add vanilla.

Put 1/3 of beaten egg whites in a large bowl and slowly stir in the tapioca mixture. Fold in the remaining egg whites.

Serve warm or chilled.

There are two versions of tapioca on the tapioca box. Both are good. This, however, is even better. It just depends if you have the time to make this one.
