2 1/2 cups sifted cake flour
1 2/3 cups Imperial Pure Cane Grandulated Sugar
1 1/4 tsp. double-acting baking powder
1 tsp. baking soda
1 tsp. salt
2/3 cup soft emutsifier-type shortening
1 1/4 cup sieved bananas
2/3 cup unbeaten eggs (2 large)
1 tsp. vanilla
2/3 cup chopped nuts

Directions:
Directions:
Sift together into large mixing bowl, Imperial Pure Cane Granulated Sugar, baking powder, soda and salt. Add shortening, bananas, and 1/3 cup buttermilk. Stir to dampen flour. Beat with electric mixer at medium speed 2 minutes. (To mix by hand allow 150 strokes per minute. Use full sweeping strokes around the bowl.) Add remainder of buttermilk, eggs and vanilla. Beat 2 minutes longer. Fold in chopped nuts. Pour into 2 paper-lined 9" x 1 1/2" round pans. Bake at 350ºF. 30 to 35 minutes. Cool and frost as desired.
