1 frying chicken(around 3 #)
seasonings (onion salt, seasoned salt, celery salt, salt & pepper)
1/3 cup flour (approx.)
1 egg
2-3 T water (about)
fine dry crumbs (bread, crackers, etc.)
grease for frying (oil, Crisco, grease left from bacon)

Cut chicken into serving pieces. Wash and pat dry with paper towel.(I don't fry the back, neck, wing tips or giblets, but freeze them to make soup later.)
Season according to taste. (I use the ones listed, but use whatever you prefer.) If time permits, let stand in refrig. 2-3 hours(or more) and that kind of improves the flavor. Beat eggs and water together. Shake chicken , one piece at a time, in flour in plastic bag. Dip into egg, then roll in crumbs. Arrange oven rack in center position. Set temp. at 325

In skillet brown chicken in hot grease and arrange on broiler pan - or old cookie sheet with cake rack in it. Bake one hour.
(smaller chicken requires a little less time; larger chicken a little more.)
