3-3 1/2 lb spaghetti squash
2 Tbsp. butter
2 Tbsp. flour
1 cup chicken broth
1 clove garlic, minced
4 boneless, skinless chicken breast cut into cubes
1/2 cup milk or heavy cream
1/2 cup freshly grated Parmesan cheese
1/2 cup fresh parsley or basil leaves, chopped
salt and pepper to taste

1) Preheat oven to 375º. With a sharp knife, prick the squash in 2-3 places and set it on a baking pan. Bake for 30 minutes.

2) Remove it from oven, cut lengthwise and scoop out seeds. Return squash halves, cut side down, to the baking sheet and bake for another 30 min. or until tender.

3) While squash is cooking, heat butter in saucepan. Add the flour and cook for 1 minute, stirring continuously. Add the garlic, broth and bring to boil, whisking all the while.

4) Add the chicken and simmer uncovered for 3-5 min or until chicken is cooked through.

5) Remove from heat and stir in milk or cream. Season with salt and pepper to taste. Pour over baked squash.
