4-8 Boneless Chicken Breast Halves
1/2 cup all-purpose flour
1 Tbsp salt
2 tsp paprika
2 tsp pepper
1/2 cup milk
1 large egg (this is optional)
Vegetable oil
1 large ziploc bag or similar heavy bag

Preheat oven to 375º

1) Rinse chicken breasts and pat dry with paper towels. Pour milk into a bowl, whisk in egg if desired.
Add dry ingredients into the shaker bag and shake to blend.


2) Pour oil into a pan to 1/2" deep and heat on medium-high setting. Meanwhile, add the chicken breasts to the bag one at a time and shake to coat. Tap the excess back into the bag. Place breasts on a plate until the oil is ready (you can test oil by dropping in a small piece of bread. If it begins to bubble and turn brown, the oil is ready)

3) Cook 4 chicken breasts at a time. Brown approximately 2 minutes, turn and brown the other side. Cook longer if the color isn't a nice golden brown, but do not overcook.

4) Place the chicken breasts on a broiler pan, and bake 45 minutes. Test for doneness by cutting into the thickest part of one breast. If it is still pink, cook another 15 minutes.

5) Cool for 5-10 minutes before serving.
