2 tsp vegetable oil
1 c sliced carrots
1 c sliced celery
1 c chopped onion
1 whole chicken (3 to 4 lbs, without giblets)
10 c water
1 1/2 tbsp salt
1/2 tsp pepper
1 16 oz. pkg frozen noodles
1 c frozen peas
1/2 tsp dried thyme or 1/2 tsp poultry seasoning
2 chicken bouillon cubes

In a lg kettle or Dutch Oven, heat oil over med-high heat. Add carrots, celery and onion, sauté for 5 minutes. Add chicken, water, salt and pepper. Bring to a boil; cover, reduce heat and simmer for 1 1/2 hours. Remove chicken from broth; set chicken aside. Skim fat from broth. Bring broth to boil again. Stir in noodles, peas, thyme or poultry seasoning and bouillon cubes. Boil, uncovered, for 15 minutes, or until noodles are tender, stirring occasionally. Remove chicken from bones and cut into bit size pieces. Stir chicken into broth.
