2 pounds potatoes (about 6 medium)
1 egg
1/4 cup grated onion
3 tablespoons flour
1 teaspoon salt
1/4 cup butter or margarine

Directions:
Wash potatoes; pare thinly and remove eyes. Shred enough potatoes to measure 4 cups. Drain potatoes thoroughly.

In small bowl, beat egg until thick and lemon colored. Mix in potatoes, onion, flour and salt. Melt butter in large skillet over low heat. Shape potato mixture into 8 patties; place in skillet. Cook over medium heat, turning once, about 5 minutes or until golden brown.
