2 1/2 - 3 1/2 lb. chuck roast (or arm)
Shortening or oil
2/3 c. ketchup
1/2 c. brown sugar
1/4 c. lemon juice
1/4 c. water
1 tsp. hot sauce
1 tsp. dill weed
1 clove minced garlic
1/4 c. chopped onion
1/2 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper

Directions:
Brown beef in oil or shortening on both sides in Dutch oven. Combine all remaining ingredients and pour over beef. Cover. Bake for 2 hours at 350º. Remove cover and turn roast over; continue to bake about one hour longer or until tender. Baste about every 15 minutes. Sauce will thicken during last hour of baking. Serve sliced roast with sauce.
