6 medium potatoes
2 Tbsp butter
1 onion, thinly sliced
1 cup grated cheese
1 Tbsp corn starch
1 tsp salt
1/8 tsp pepper
2 1/2 cups milk
1/4 cup cracker crumbs

Directions:
Directions:
Peel and slice potatoes.

Cook onions in melted butter in skillet until lightly browned.

Mix corn starch, salt, pepper, and milk together.

Place a layer of potatoes in greased 13" x 9" baking pan. Next put down layer of onions; then pour 1/3 of milk mixture; then a layer of cheese. Repeat layering. Top with cracker crumbs.

Cover and bake 1 hour in a 350º oven. Uncover and bake an additional 15 minutes.
