Ingredients: 1 whole chicken - free range is best 6 Tbsp Memphis Rub 1 14 oz can beer
Rub: 1/4 cup paprica 1 Tbsp brown sugar 1 Tbsp sugar 2 tsp salt 1 tsp pepper 1 tsp dry mustard 1 tsp garlic powder 1 tsp onion powder

Directions:Preheat oven to 400º and place rack on lowest bottom level. Remove any innards from inside chicken. Rinse chicken inside and out under cold, running water. Rub chicken both inside and outside with Memphis rub or your choice of spices. Open a standard 14 oz can of your favorite beer, punch a few extra holes and reserve 1/4 of the beer. Add 2 Tbsp rub into beer can. Place beer can in ovenproof dish. Arrange the chicken on the beer can, allowing the two legs to form two sides of tripod so chicken is stable. Tent chicken with aluminum foil to prevent over-browning. Pour remaining 1/4 can beer in pan. Place chicken in oven. After 1/2 hour, reduce heat to 350º. Rotate chicken in a half circle to cook evenly, should brown slowly and evenly. Remove tent. Cook recommended time according to weight of chicken.
