1/2 cup butter, softened
1 cup sugar
1 teaspoon vanilla
1 egg
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt

1/2 cup raspberry jam
1/2 cup shredded coconut
1/4 cup chopped pecans or walnuts

Directions:
Directions:
In a medium bowl, beat butter, sugar, vanilla, and egg until light and
fluffy. Add flour, baking powder, and salt, beating just until
blended. Refrigerate until firm, several hours or overnight. Let dough
stand at room temperature until just soft enough to roll easily. On a
slightly floured surface, roll dough into a 9" X 12" rectangle. In a
small bowl, combine jam, coconut, and pecans. Spread jam mixture
evenly over dough to within 1/2 inch of edges. Roll up dough,
jelly-roll fashion, from the long side. Cut the log in half for ease
in handling, then wrap and refrigerate until firm, several hours or
overnight. To bake cookies, preheat oven 375 degrees. Cover cookie
sheets with parchment paper. Cut chilled log into 1/4 inch slices and
place two inches apart on parchment paper-covered cookies sheets. Bake
8 to 10 minutes or until edges are golden. Remove cookies from baking
sheets and cool on parchment paper.
Makes about 36 of your new favorite Christmas cookies!

(These cookies have the added busy-ness relieving benefit of being
easy to mix and shape in early December, then you can freeze the logs
until ready to bake. Leftover frozen logs make pretty cookies for
Valentine's Day, too!)

It's almost time for Christmas baking - Yeah!
I am a mom, a wife, a sister, a daughter, and an aunt, and each year
my family gathers at our house, and as you can imagine, it is a
tremendous amount of work for me. I truly love making the holidays
memorable for everyone, but the time and energy required for that is a
bit much. The baking alone is a huge undertaking since I usually make
dozens of at least 10 different types of cookies and candies to share
with family and friends.
One year I heard what sounded like an excellent tip for managing
holiday stress: ask family members what their favorite holiday
traditions are and concentrate on those. That way you are not dragging
your children and husband to events they don't care about or making
treats they don't like. (Or if you are, at least you will go into it
expecting some resistance!)
So I did that. I quizzed my husband and my sons about each event, each
tradition, each food I make for the holidays, and I was glad to be let
off the hook for some of the tired-out rituals we had. When I got to
the cookies, I asked them if I were to only make one Christmas treat,
which would they like it to be. The unanimous answer was, "Make the
Raspberry Swirl Cookies!"
Gene, when a 6 year old, a 10 year old, and two adults all love the
same cookie, you know it's a winner, and I am sure you will think so,
too!
