1 1/2 pounds of turkey sausages
8 medium zucchini
4 chiles poblanos
1 can of corn
1 small onion
3 garlic cloves
Panela Cheese
4 medium roma tomatoes
1/4 cup canola oil
2 tablespoons Knorr Bullion (Sabor Caldo De Pollo)
1 leaf of Epazote (sold in Mexican markets)

Directions:
Mince garlic and onions and saute in the canola oil in a medium size pan until onions are translucent. Wash and cut the zucchini in small bite size pieces. Once the onions are translucent add the zucchini and season with salt and pepper. Add the Epazote leaf and the Bullion. Place the lid on the pan. Cut the tomatoes in small pieces and add the pan.

Roast the poblano peppers, then place in a container covered with plastic and let them steam. After they steam remove the outer sharred layer. Open and remove the veins and cut in strips. Add the peppers and the corn to the pot and cook until tender. Then cut the turkey sausages in slices and add to the pot cut for another 10 minutes. When you are ready to serve ad the panela cheese.

If you can't find Epazote use coriander leaves. Epazote is a lemony type herb leaf.
