1 pound black beans, washed
1/4 cup olive oil
1 large onion, minced very small
1 medium green bell pepper, cut in half
6 cloves garlic, peeled and minced very small
2 Bay Leaves
1 teaspoon of ground Oregano
˝ teaspoon of ground Cumin
2 Chorizos Spanish Style 3 ˝ oz (Goya - Fiesta carries them)
5 cups water
1 tablespoon vinegar
2 teaspoons salt
1 teaspoon white sugar
1 teaspoon black pepper

Directions:
Directions:
Place beans in a large saucepan with the 5 cups of water, and soak 8 hours, or overnight; keep them in the same water add half the bell pepper and cook them until tender (about 1 ˝ hours at medium heat). Once tender remove the green pepper. Place aside.

Heat oil in a medium saucepan over medium heat, and sauté onion, the other half of the green bell pepper, oregano, cumin, bay leaves, and chorizo cut into small rounds and garlic until tender.

Stir the onion mixture, salt and pepper into the beans, continue to simmer for about ˝ hour then add the vinegar. Half hour after that add sugar. Bring to a boil. Reduce heat, and simmer for another hour, stirring occasionally.
